Chicken Ramen Soup

I hope you’ve had a good Friday today! My Friday has been cold, rainy and cozy. Days like today are perfect for curling up in a chair with a good book, watching a movie, and eating comfort food.

Supper this evening was homemade chicken ramen soup. I use the store bought packs of ramen, but I make my own broth and add veggies. I thought maybe I’d share the recipe with you! Measurements are approximate because I just go by sight on this recipe.

Chicken Ramen Soup
Serves 3-4 people

Ingredients
1.5 pounds chicken breast, cooked and diced
4 carrots, sliced into very thin rounds
2 cups shredded Napa cabbage (you can use a small bag of shredded cabbage, but the cabbage flavor will be much stronger)
1-2 tsp ginger paste (start with 1 tsp because a little goes a long way!)
1 Tbsp brown sugar
1 tsp minced garlic
1 Tbsp sesame oil
Pepper to taste
6 cups chicken broth
3-4 packages of instant ramen noodles

Bring the chicken broth to a boil in a large pot over medium-high heat. Add the chicken and return to a boil. Reduce heat, cover and simmer.

Using a wok or a large stir-fry skillet, heat the sesame oil, brown sugar, ginger paste and garlic over medium-high heat. Add the cabbage and carrots and stir. Add pepper to taste. Cook the veggies until the carrots are tender-crisp. The cabbage will have wilted at this point. Add the mixture into the simmering chicken broth.

Let the soup simmer for about 15-20 minutes or until carrots are soft. Prepare noodles according to package directions with the exception of using the seasoning packet. You will not need that!

I cook the noodles one pack at a time, and then place them in each person’s bowl. I leave the broth on the stove simmering or on super low heat, and then everyone gets their own broth.

On a side note, if ramen noodles aren’t your thing, you can try using a noodle you do like. I’ve used rice noodles before. They did okay. I haven’t tried egg noodles, but they may work fine. Oh man, now I’m thinking about homemade noodles. Yum!
