Spring is Here!

Happy Friday, my friends! As I sit here tapping away at the keyboard, the sun is shining brightly through my window, my cauliflower sprouts and jalapeno sprouts are soaking it all in, and I’m in a good mood.

A quick update on the tortillas. They turned out really tasty! I’m going to order a tortilla press, though, because they kind of fell apart on me. I also made some applesauce with pinata apples, and it is quite delightful! There’s just the slightest hint of pineapple in there.

Today I have the house to myself. My parents have traveled to another city to drop off their tax stuff. They’ll probably be gone a good portion of the day so I can get some things done in quiet. A good testament of that is that I already have the bills done and ready to go to the post office, a load of laundry is done and ready for the dryer, and I’m writing this.

Gracie, my beloved feline, has been battling a cold this week, but she seems a little better today. She actually came out and laid in the sunshine, and she played a little bit with me. She also hacked up a hairball on my bed in the middle of the night, then another one on the living room floor this morning, and then the tail end of the living room one came up on my mattress topper. What can I say? She is a long-haired cat.

I’m looking forward to getting the menu put together for the next week, and we’ve had some family chitchat about how we’re going to renovate the laundry room and the main bathroom. I think we’ve pretty much got the laundry room squared away. We just need to make a decision on the flooring. We’ll probably use the tax refund to fix the bathroom since it is in desperate need of help.

I did get a surprise on Wednesday night. I was finishing up the applesauce and my phone rang. I didn’t answer it since it was an unfamiliar number but they left a voicemail. It was the library letting me know that I had won the drawing from the Blind Date with a Book! I was so excited! I’ve never won anything in my life. I jumped in the car and drove down there. I was expecting maybe a gift card to a bookstore or something simple like that, but nope! When my library gives away a prize, they give away a prize. I got a Russell Stover gift basket with two big bags of chocolate (one is pecan delights and the other assorted), two boxes of chocolate (one is assorted and the other is dairy cream caramels), and two Mint Dreams (basically a mint marshmallow fluff covered in dark chocolate). Then, I got a tote bag and its contents were a bookmark with pictures of galaxies on it, a handmade laser-engraved journal, a DVD of Mamma Mia! and Mamma Mia! 2, and two books. Can I just say that I’m a very happy camper?

At some point, I’ll be making a veggie soup. I got the veggies at the store last week, but no one seems interested in it yet. Last night’s supper was gluten free rotini with meat sauce, salad, and gluten free garlic bread. I used the leftover baguette that I had and smeared some garlic butter I’d gotten from Aldi on it, popped it in the oven for a few minutes and voila! It was actually super delicious.

Now that I’ve successfully made myself hungry, I’m going to sign off. I still have a lot to do and I haven’t even gotten out of my pj’s yet. Until next time, stay healthy my friends!
