Thursday Thoughts

Today’s Bible Reading- Genesis Chapters 33-35 & Matthew Chapter 11.

Good morning, friends. It’s amazing what a good night’s sleep will do. Coffee does amazing things too.

After I wrote yesterday’s post, I was getting ready to feed the cats outside and got quite the shock when I opened the blinds. Fog! A very heavy fog at that. I opened the weather app on my tablet and got an even bigger surprise. We had a freezing fog warning until 10 am. That’s not something we get in this part of the world. The weather app was wrong, though. The fog lifted some, but remained for the rest of the day.

I’ve checked today’s weather, and we have a fog advisory but it’s just the standard fog. No freezie fog as I like to call it. Normally, we get a really big ice storm at some point in January, so I’m keeping an eye out for that. I’m not one to drive in wintry weather. I prefer to cozy up with a cup of hot cocoa (extra marshmallows) and watch the snow and ice fall.

In other news, the bbq ribs came out very tender yesterday. I was concerned that I would overcook them, but they were easily cut with a fork. I learned that country style pork ribs are boneless! 🥳. Another thing I learned was that you CAN over season ribs. The rib rub I’d purchased encouraged liberal use of the mix as the spice flavors mellow during cooking. I did that but I did it a bit too much. On top of that, the ribs looked a bit dry so I put some sweet and spicy bbq sauce on them for the last 30 minutes of cooking. That was a good decision, but oh my goodness. There was a bit of an inferno in my mouth.😱

I’ll definitely make the ribs again, but will go easy on the rib rub. Or maybe skip that altogether and just season with salt and pepper and sauce them up during that last half hour again. I also believe I’ll purchase some fresh blueberries this week for my zucchini muffins. I do enjoy eating the muffins for breakfast. I eat one of those and then put a slice of cheese on some toast and make a chicken sausage sandwich. I only use one slice of bread, but that’s all I need. It tides me over until lunch.

Today is the day I make my menu for next week and I may also order the groceries as well. I try to make menus based on what I have on hand and what is on sale. Hence the reason we had ribs this week.

Today’s goals also include trying to finish the laundry that I’ve been neglecting. Usually I love to do laundry, but not this week.
