A Better Day

Today’s Bible Reading- Numbers Chapters 5-6 & Mark Chapter 4 Verses 1-20.

Good morning, friends. Today is a much better day. I had a wonderful, relaxing day yesterday. My headache didn’t come back, the sun shone brightly, and we had one of the most delicious meals on the face of the earth.

This morning is nippy, but there is some rain. I can hear the birds chirping away, waiting for the sunrise.

As I said about the meal, it was absolutely delicious! I spatchcocked the chicken and liberally seasoned both sides with Weber’s Kick’n Chicken seasoning. I didn’t rinse the chicken. I just took it out of the package and prepped it. Pop laid it on the grill, skin side down, and let it sear for five minutes, and then flipped it and let it cook the rest of the way. What I thought would take an hour took around 45 minutes or so. I made some mashed potatoes and microwaved a bag of seasoned veggies. The chicken finished before I put the veggies in the microwave, so it had a chance to rest for six to seven minutes. I’m telling you, it was probably the most delicious meal I’ve had this year. Pop and Mom were in agreement, too, so you know it was good!

Today is lemon garlic pork tenderloin, and another round of mashed potatoes and veggies. I also have some bacon and eggs to cook for this week’s breakfast. I kind of forgot about the bacon until just now.

The sock is making progress. I’m trying desperately to not make my stitches too tight. It’s tough going, though.

In other news, well, I have no other news. Today is laundry day for me. I have a pile of it, too. I may also try to change my sheets, but we’ll see how that goes.
