Today’s Bible Reading- Nehemiah Chapters 4-6 & Acts Chapter 2 Verses 14-47.
Good morning, my friends. I hope you’re well. I got some sleep last night! I’m currently on my first cup of coffee, and it is delicious!
Supper turned out rather well last night. Even Mom liked it! I made another hash. I diced up a couple of small sweet potatoes, an onion and a golden delicious apple that needed to be used and cooked it with some sausage from a local farm. The only seasonings I added were salt and pepper, and I didn’t drain the sausage. I added it to the skillet raw with the fruit and veggies and let them soak up the flavor. There really wasn’t much grease, though! I also made a salad of some strawberries and cucumbers (that I picked from my cucumber plants) and sprinkled a little parsley on them. If I’d have had mint I would have preferred that, but you have to use what you got, yeah?
All that was left over was a little of the fruit salad. I mean, barely a spoonful. I ate that. Pop finished off the hash, and I had also heated up the beans left over from Tuesday night’s supper. There’s a bit of that left but the hash was a hit! Mom even enjoyed the sweet potato! *happy dance*
It seems impossible, but tomorrow my best friend comes to town to visit. She’ll be leaving early in the morning to get here so we can hang out tomorrow evening. It’ll be so nice to chat with her and catch up.
Tonight’s supper will be grilled hamburgers. I’ll probably make another strawberry and cucumber salad since my supplies are running low. It’s kind of nice to be running out of things, but I need to make a grocery run. I may try another produce market today. Before I do that, though, Mom has lab work that needs to be done and I need to balance the bank accounts. My brain was not in the mood yesterday. I could barely function.
Well, I have things to do and my Bible to read. I need to get around quickly so we can be out of here early and back early. It’s supposed to be 87 degrees here today with no chance of rain. I’m going to predict that I’ll be watering the garden this weekend. We’ll see. Love you all and until next time, stay safe my friends. ❤
